Fresh fish should smell like Watermelon.

If you have ever tried fish, caught and cooked by a local fisherman, you know that few things are better than that.  Fish that is so light and soft, it does not need  but a pinch of salt and a few drops of lemon to be perfect.

Fish House and Market  “The Sandbar”  in San Antonio, TX  knows exactly what I mean. Owner, Andrew Weissman, believes “fresh fish should smell like watermelon.”  And he makes sure fish  at “The Sandbar” is proof of that.

Executive chef, Chris Carson,  believes in the same principle.  He works hard to make sure fish  at “The Sandbar” never gets overpowered by any other ingredient.  Herbs and sauces only serve as complements, staying true to Andrew’s beliefs.

Today Carl is proud of his most recent delivery. Fresh fish and trumpet mushrooms just came in. It is hard not to agree with him… fresh food is beautiful!     Bon appetite.
